Anzac biscuits

Makes: 12-15/a tray

I first made these delicious biscuits for Anzac Day recently, and have been making the ever since!. They are so easy and quick!

Ingredients

1 cup gluten free rolled oats, or almond flakes for gluten free

3/4 cup desiccated coconut

3/4 cup fine buckwheat flour

1/2 cup coconut sugar

1/2 cup coconut butter, melted (or cacao butter, I use coconut oil*)

2 tbsp maple syrup

1 tbsp molasses

1 tsp bicarb soda

2 Tbsp hot (just boiled) water

Instructions

  1. Preheat the oven to 180 degrees C while you prepare your mix.

  2. In a large bowl, whisk together oats, coconut, flour and sugar.

  3. Melt coconut butter until liquid, and add maple syrup to combine over low heat, until liquid.

  4. Separately, add bicarb soda into cup. When Coconut butter/oil mixture is liquid, add hot water into the cup. Quickly add the cup contents to the coconut butter/oil mixture above, it should fizz.

  5. Add the wet mixture into dry ingredients and use a spatula or hands to combine. Mix until a dough forms. If the mixture feels dry, you can add hot water by the half tablespoon as needed.

  6. Take about 2 heaped tablespoons of dough and form a large circular cookie shapes. Flatten with your hands to thin out. Bake biscuits for 11-13 minutes and let cool completely before enjoying.
